Aloo Baingan
A tangy potato and aubergine curry cooked with mustard seeds, cumin and spiced curry sauce.

A quick and easy potato and aubergine curry with a tangy, spicy finish. The vegetables are fried first, then folded into the sauce.
What you’ll need
Ingredients
- 2-3 tbsp sunflower oil
- 8-10 baby aubergines
- 4 medium potatoes
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 400ml curry sauce
- 1 tsp salt, or to taste
- 1 tsp coriander powder
- 1 tsp cumin powder
- 3/4 tsp turmeric powder
- 1/4 tsp red chilli powder (optional)
- Oil for shallow frying
Step by step
Method
- Cut each aubergine three-quarters of the way down lengthwise without splitting it completely, then fry until soft.
- Peel and cut the potatoes into small cubes and fry until cooked.
- Set the fried aubergines and potatoes aside.
- Heat 3 tbsp oil in a wok and add the mustard and cumin seeds. Let them pop and sizzle, then cool slightly.
- Add the curry sauce and spices and stir.
- Cook until the sauce changes colour, then add the aubergines and potatoes.
- Cover and cook over low heat for 10 minutes.
- Turn off the heat and leave covered for another 5-10 minutes.
- Serve with white rice, naan or bread.
Helpful notes
Tips
- Handle the aubergines gently after frying so they keep their shape.
