Chicken breast is cut into cubes and cooked slowly in a rich sauce made with coconut milk, yoghurt, butter and spices.

Most of the work is done by the slow cooker: add the ingredients, cook for a few hours and stir occasionally so everything cooks evenly.

Ingredients

  • 1 onion, finely chopped
  • 100g tomato puree
  • 400ml coconut milk
  • 200g coconut cream (optional)
  • 4 garlic cloves, crushed
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp chilli powder

  • 1 tsp salt, or to taste
  • 4 heaped tbsp natural yoghurt
  • 125g salted butter
  • 2 large chicken breasts, cubed
  • Fresh coriander or mint leaves for garnish

  2. Add the coconut milk, coconut cream and yoghurt.
  3. Add the spices and mix well.
  4. Add the onion, butter and chicken.
  5. Cover and cook for about 4 hours, stirring occasionally.
