Chana Daal with Courgette
Nutty chana daal cooked with courgette, tomatoes and warming spices until soft and comforting.

Chana daal has a naturally sweet, nutty taste. This version adds courgette and can be made in a pressure cooker or simmered more slowly in a saucepan.
For a smoother texture, mash some of the courgette and daal once cooked.
What you’ll need
Ingredients
- 350g chana daal
- 1 courgette, peeled and sliced
- 1 small onion, chopped
- 2 green chillies
- 2 garlic cloves
- 1/2 inch ginger
- 200g chopped tomatoes
- 1 tsp salt, or to taste
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/4 tsp red chilli powder (optional)
- 1/2 tsp turmeric powder
- 650ml boiling water
- 2-3 tbsp oil
- 1/4 tsp garam masala
- Fresh coriander for garnish
Step by step
Method
- Soak the daal for at least 20 minutes, then wash and drain.
- Heat the oil in a pressure cooker and fry the onion until light golden-brown.
- Blend the tomatoes, chillies, garlic, ginger and fried onion.
- Place all the ingredients in the pressure cooker except the garam masala and fresh coriander.
- Mix over the heat, add the water, cover and cook under pressure for 15-20 minutes over medium heat.
- Allow the pressure to drop fully and check the consistency. Add water if too thick or simmer uncovered if too runny.
- Garnish with garam masala and coriander and serve with basmati rice or naan.
Helpful notes
Tips
- If using a saucepan, allow significantly longer cooking time until the daal is soft.
