Chana Daal with Courgette

Nutty chana daal cooked with courgette, tomatoes and warming spices until soft and comforting.

Chana daal has a naturally sweet, nutty taste. This version adds courgette and can be made in a pressure cooker or simmered more slowly in a saucepan.

For a smoother texture, mash some of the courgette and daal once cooked.

Ingredients

  • 350g chana daal
  • 1 courgette, peeled and sliced
  • 1 small onion, chopped
  • 2 green chillies
  • 2 garlic cloves
  • 1/2 inch ginger
  • 200g chopped tomatoes
  • 1 tsp salt, or to taste
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/4 tsp red chilli powder (optional)
  • 1/2 tsp turmeric powder
  • 650ml boiling water
  • 2-3 tbsp oil
  • 1/4 tsp garam masala
  • Fresh coriander for garnish

Method

  1. Soak the daal for at least 20 minutes, then wash and drain.
  2. Heat the oil in a pressure cooker and fry the onion until light golden-brown.
  3. Blend the tomatoes, chillies, garlic, ginger and fried onion.
  4. Place all the ingredients in the pressure cooker except the garam masala and fresh coriander.
  5. Mix over the heat, add the water, cover and cook under pressure for 15-20 minutes over medium heat.
  6. Allow the pressure to drop fully and check the consistency. Add water if too thick or simmer uncovered if too runny.
  7. Garnish with garam masala and coriander and serve with basmati rice or naan.
