Chicken Kebab

Soft, juicy chicken mince kebabs seasoned with herbs, chillies and spices, ideal for the barbecue, grill or oven.

Chicken mince makes especially soft kebabs. For the best flavour, combine the ingredients and leave them to marinate overnight, or at least for a couple of hours.

These kebabs are excellent on the barbecue but can also be grilled or oven-baked.

Ingredients

  • 4 chicken breasts, minced
  • 10-15 green chillies, according to taste
  • 2 onions
  • 2 inches ginger
  • 4 garlic cloves
  • 40g fresh coriander
  • 2-3 tsp salt, or to taste
  • 1 heaped tsp coriander powder
  • 1 heaped tsp cumin powder
  • 1/2 tsp chilli powder (optional)
  • 1 tsp black pepper, crushed
  • 1 tsp coriander seeds, crushed (optional)
  • Small bowl of water or oil for shaping

Method

  1. Mince the chicken breasts.
  2. Blend the onions, green chillies, ginger and garlic, then combine with the chicken mince.
  3. Add the dry spices and mix well.
  4. Chop the coriander and mix through the mince.
  5. Refrigerate overnight or for at least 2 hours.
  6. Keep the mixture chilled until ready to shape, as warm mince is harder to attach to skewers.
  7. Wet or oil your hands, take a manageable ball of mince and squeeze it around a skewer.
  8. Pinch the ends and gently shape the mince into a kebab.
  9. Cook the skewers on a barbecue, grill or in the oven.
  10. Turn every couple of minutes until evenly browned and cooked through.
  11. Serve with naan, salad, mayonnaise and/or green chutney.
