Chicken Wing Curry
A straightforward chicken curry with wings, tomatoes, warming spices, yoghurt and lemon.
From Yasmin’s Kitchen
This simple chicken curry uses wings, though chicken breast cut into cubes can be used instead. It is a good introductory curry recipe because the method is straightforward.
What you’ll need
Ingredients
- 8 chicken wings
- 1 medium onion, chopped
- 1 red chilli
- 3 garlic cloves
- 1/2 inch ginger
- 3-4 tomatoes, chopped, or 200g tinned tomatoes
- 1 tsp salt, or to taste
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
- 200ml water
- 2 tbsp oil
- 1 tbsp yoghurt (optional)
- 2 tbsp lemon juice
- Fresh coriander or mint leaves for garnish
Step by step
Method
- Heat the oil in a saucepan and fry the onion until light golden-brown.
- Blend the tomatoes, chilli, garlic, ginger and fried onion.
- Return the mixture to the saucepan, add the spices and stir.
- Add the chicken and cook for 3-4 minutes, stirring occasionally, until it changes colour.
- Pour in the water and cover with a lid.
- Cook for 20-25 minutes over medium heat until the chicken is cooked through.
- Adjust the consistency by simmering longer if too runny, or adding a little water if too thick.
- Stir in the yoghurt if using, then add the lemon juice.
- Garnish with coriander or mint and serve with basmati rice, chapatti or naan.
