
Lamb/Red Meat
Gonglu Gosht
Turnips, spinach and lamb cooked together with curry sauce and warming spices for a sweet, savoury Punjabi-style dish.

Gonglu Gosht means turnips cooked with red meat. Turnips are also known as shalgam in Punjabi, Urdu and Hindi.
This version combines turnips with spinach and lamb. A pressure cooker makes the dish much quicker, while saucepan cooking will take longer until the turnips and meat are tender.

Ingredients
- 2 tbsp oil or 1 tbsp ghee
- 200ml curry sauce
- 400g spinach puree
- 6 small turnips, sliced about 1/2cm thick
- 6 lamb chops or other red meat
- 1-2 green chillies (optional)
- 1/4 tsp salt, or to taste
- 1 heaped tsp cumin powder
- 1 heaped tsp coriander powder
- 1/2 tsp turmeric
- 3-4 tbsp sugar, to taste
- 250ml water
Step by step
Method
- Puree the spinach with the green chillies and set aside.
- Heat the oil in a pressure cooker and add the curry sauce and spices.
- Add the lamb chops and stir for a couple of minutes over medium-high heat.
- Add the turnips, spinach puree and water.
- Stir, close the pressure cooker and cook under pressure for about 14 minutes over medium heat. Allow the pressure to drop fully before opening.
- Check that the meat and turnips are soft and tender.
- Return to the heat uncovered and cook until excess water has evaporated.
- Add 2 tbsp sugar and taste. Add more, up to about 4 tbsp total, if you prefer the sauce sweeter.
- Mash some of the turnips into the sauce if preferred.
- Serve with rice.
Helpful notes
Tips
- If using a saucepan instead of a pressure cooker, allow considerably longer for the turnips and meat to become tender.
