Paya Curry
A warming lamb trotter curry cooked until tender in a deeply spiced sauce.

Paya is a traditional curry made with lamb trotters. Thorough cleaning is important before cooking.
A pressure cooker is the quickest way to make the trotters soft and tender; saucepan cooking can take several hours.
What you’ll need
Ingredients
- 5-6 cleaned lamb trotters (paya)
- 2 tbsp oil or 1 tbsp ghee
- 400ml curry sauce
- 1 tsp salt, or to taste
- 1/2 tsp chilli powder (optional)
- 1 heaped tsp cumin powder
- 1 heaped tsp coriander powder
- 1 level tsp turmeric
- 2 litres water
- Garam masala for garnish
Step by step
Method
- Heat the oil or ghee in a pressure cooker.
- Add the curry sauce and mix in the spices.
- Cook until sizzling and the curry sauce changes colour slightly, then add the paya.
- Stir occasionally for 5-10 minutes.
- Add 2 litres of water, close the pressure cooker and cook under pressure for about 45 minutes over medium heat. Allow the pressure to drop fully before opening.
- Check that the meat is tender. If the sauce is too thick add a little water; if too thin, simmer uncovered until reduced.
- Garnish with garam masala and serve with steamed basmati rice or naan.
