Spicy Lamb & Potato Burgers (Tikkis)

These spicy lamb and potato burgers are ideal for batch cooking and freezing. They are handy for quick meals or unexpected guests.

The recipe is prepared in stages: cook the lamb, prepare the potato mixture, combine, shape and fry.

Ingredients

  • 1.8kg minced lamb
  • 6 garlic cloves
  • 2 inches ginger, peeled and sliced
  • 10-12 small green chillies
  • 2 small-medium onions, peeled and sliced
  • 3 level tsp salt, or to taste
  • 1 heaped tsp coriander powder
  • 1 heaped tsp cumin powder
  • 6 large potatoes, boiled and mashed
  • 1 1/2 level tsp salt for the potato
  • 3/4 level tsp red chilli powder
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • Juice of 1 lime or lemon
  • Handful of chopped coriander
  • 5 large eggs
  • 1/2 tsp salt for the egg coating
  • 1/4 tsp red chilli powder for the egg coating
  • Gluten-free flour for coating
  • Oil for frying

Method

  1. Place all the lamb ingredients in a saucepan and cook over medium heat until the liquid has evaporated.
  2. Stir regularly to prevent lumps.
  3. Leave the cooked mince to cool.
  4. Blend the mince mixture in a food processor until fine and set aside.
  5. Boil the potatoes, then mash with the potato ingredients.
  6. Combine the lamb and potato mixtures well and adjust seasoning if needed.
  7. Shape into small round burgers. The mixture should make roughly 20-30 patties depending on size.
  8. Whisk the eggs with salt and red chilli powder.
  9. Place gluten-free flour on a plate for coating.
  10. Heat the frying oil until a small drop of egg mixture bubbles immediately.
  11. Coat each burger in flour, then egg, and fry.
  12. Turn once the coating seals and cook until evenly golden.
  13. Drain on kitchen paper.
  14. Serve with chips or salad.
